FRIED GRAM (Pottukadalai) POORANAM KOZHUKATTAI

Kozhukatti ( Rice dumpling ) is very common in South India and are identified by different names in different states. Pooranam kozhukattai is a stuffed recipe covered with rice flour. Kozhukattai is usually made during Vinayagar Chadhurthi festival. Today I am sharing an easy pooranam (stuffing) made with fried gram. You can eat this pooranam itself as a snack. I have already shared a Coconut pooranam kozhukattai  and will share more stuffing recipes soon.

SERVING SUGGESTION :

INGREDIENTS :

For Outer Covering : 

  • Rice flour – 1 cup (Pacharisi mavu)
  • Salt – as needed
  • Sesame oil – 1 Tsp + 1 Tsp
  • Water – 1.25 cup

For Stuffing :

  • Fried gram – 1/2 cup
  • Jaggery (grated) – 1/2 cup or less
  • Coconut – 3 Tbsp Grated
  • Sesame seeds (black or white) – 1 Tbsp
  • Cardamom powder – 1/4 Tsp

PREPARATION :

  • Coarsely grind the fried gram.
  • Grate the jaggery.

PROCEDURE :

For Stuffing :

  1. Add coarsely grinded fried gram, jaggery, sesame seeds, coconut and cardamom powder. 
  2. Combine well.

For Outer Covering : 

  1. Boil water in a pan.
  2. Add salt and sesame oil.
  3. Add rice flour and mix well.
  4. Turn off the heat and set it aside.
  5. When it is warm, apply oil on your palm and knead it as a soft dough.
  6. Cover it with a damp cloth.

Making Kozhukattai :

  • Apply sesame oil on your palm.
  • Make small sized balls out of the white dough. Cover the dough/balls with wet cloth all the time. Else it will become dry easily.
  • Flatten it using fingers. Circle shape. (See pictures below)
  • Fill with a Tbsp of stuffing.
  • Seal with other side of the dough. You can also use dumpling mould for this. You can make these dumpling in any shape you prefer.
  • Repeat with all the dough.
  • Steam these kozhukattai for 12 min. I am using an idly pan. You can use any kind of steamer for this.
  • After 12 min allow it to cool down for some time. Then remove it from plate and serve it.

TIPS :

  • Do not flatten the white dough too thin. Then it will break easily while steaming.
  • You can adjust the stuffing ingredients as you like.
  • You can eat this pooranam as itself.

    1. Yes, It is. Thanks Megala. Dry version of pooranam makes the stuffing process little hard when compared to wet pooranam. But I prefer to make dry version. I love to store these stuffing and I could eat these all day as a snack.
