CoconutMilk Kushka | Plain Biryani | Video recipe | Step by step procedure with pictures

Kuska is simply a biryani without any meat or vegetables. It is commonly referred as Plain Biryani. You can simply serve this with raita and boiled eggs. I always love to make this kuska using coconut milk. It will make the rice more flavorful and rich.

This coconut milk kuska preparation is slightly different from the regular biryani method. But it is definitely worth for the taste of the rice. You can add any meat or vegetables to this method.

INGREDIENTS :

  • Basmati Rice – 1 cup
  • Water – as needed
  • Oil – 2 Tbsp
  • Onion – 1/2 cup (thinly sliced)
  • Green chili – 2
  • Turmeric powder – 1/2 Tsp
  • Red chili powder – 1/2 Tbsp
  • Garam Masala – 1 Tsp
  • Salt – as needed
  • Coconut milk – 2 cups
  • Coriander leaves – for garnishing
  • Ghee – 1 Tsp

Whole Spices : 

  • Cinnamon – 1 inch
  • Cardamom – 4
  • Cloves – 4
  • Bay leaf – 1
  • Shahi jeera – 1 Tsp

For Paste :

  • Oil – 1 Tbsp
  • Onion – 1/2 cup (roughly chopped)
  • Ginger – 2 inch
  • Garlic – 4 cloves
  • Tomato – 1 (large)
  • Mint – few leaves
  • Salt

PREPARATION :

  1. Wash the basmati rice and soak it for 30 min.
  2. Chop onion , tomato , ginger and garlic.

PROCEDURE :

For the Paste : 

  1. Heat oil in a pan. Add onions and cook until translucent.
  2. Add ginger and garlic pieces and cook for a min.
  3. Add in sliced tomatoes and mint leaves. Cook for 5 min.
  4. Add salt and turn off the heat.
  5. Let it cool down and then make paste.

For Kushka : 

  1. Heat oil in a pressure cooker. Add whole spices. (cinnamon , cardamom, cloves, bay leaf, shahi jeera)
  2. Saute for few seconds. Add sliced onions and green chili.
  3. Cook until onions become golden brown. Add the paste.
  4. Combine well and add turmeric, chili powder, garam masala and salt.
  5. Saute well until it releases oil (about 5-6 min)
  6. Add soaked rice and combine it gently without breaking the rice.
  7. Stir in the coconut milk and mix thoroughly.
  8. Cover the pressure cooker and allow 1 whistle.
  9. Turn off the heat and let it rest for few min until the pressure gets released.
  10. Add some ghee and coriander leaves and serve it carefully without mashing or breaking the rice.

NOTES :

  • You can add any vegetables / meat / mushrooms to this method. Cook accordingly.
  • You can add a green chili while making paste.
  • Also you may use half water and half coconut milk for this recipe.
