Gobi Paratha | Cauliflower Stuffed Chapati | Step by step procedure with pictures

Cauliflower(Gobi) paratha is a popular paratha recipe in Punjab, India. It is commonly served for Breakfast and some may have it during lunch. a simple raita or pickle goes well with this paratha.

Gobi_Paratha_CauliflowerThis is a stuffed paratha. You can add more stuffing and make a thick paratha or use less stuffing and make a thinner one. Both tastes good. Choose your preference.



  • Serve with Raita or pickle of your choice.

For dough :

  • Wheat flour / Atta – 1.5 cups
  • Salt – as needed
  • Water – as needed
  • Oil – 1 Tbsp + for making parathas

For Stuffing :

  • Cauliflower – 2 cups grated. (You can use store bought cauliflower rice also)
  • Ginger – 1 Tbsp (grated)
  • Garlic (opt) – 1 Tbsp (grated)
  • Green chilli(opt) – 1
  • Oil – 1 Tbsp
  • Red chilli powder – 1 Tsp
  • Coriander powder – 2 Tsp
  • Cumin powder – 2 Tsp
  • Garam Masala – 1 Tsp
  • Dry mango powder/Amchur – 1 Tsp
  • Salt – as needed
  • Turmeric – 1/4 Tsp
  • Coriander leaves – few


  • Cut the cauliflower into florets. Check for worms. Wash and drain it well. Grate it using a grate or food processor.
  • Grate ginger and garlic. Finely chop green chilli and coriander leaves.


For Dough :

  1. In a bowl add wheat flour and salt.
  2. Add required water and knead a soft dough.
  3. Spread some oil on the top and cover it.
  4. Let it rest for 30 min.

For Stuffing :

  1. Heat oil in a pan. Add grated ginger and garlic.
  2. Saute for a min. Add grated cauliflower and green chilli.
  3. Cook for 3-4 min. Add spice powders ( red chilli powder, coriander powder, cumin powder, amchur powder, turmeric, garam masala and salt)
  4. Combine everything together and saute for few minutes.
  5. Add chopped coriander leaves and turn off the heat. Let it cool down.

Making Paratha :

  1. Make medium sized balls out of the dough.
  2. Dust each ball with flour and roll it thick using a rolling pin.
  3. Place 2 Tbsp of stuffing in the middle.
  4. Carefully cover it. (See pic below)
  5. Roll it gently. Do not make it too thin. Then your stuffing will come out. Also use flour for dusting as needed.
  6. Repeat for all the parathas.
  7. Heat a tawa / griddle. When it is hot, place the paratha over it.
  8. Let it cook for a min and flip it carefully. Spread 1/2 Tsp oil on both the sides.
  9. Flip it until you get beautiful brown spots on the parathas.
  10. Repeat for all. Place it over a cooling rack to prevent it from sogging.


  • You can adjust the spices according to your taste.
  • Be careful while rolling the parathas. First roll it thick and place the stuffing. If you roll it thin, it will easily spill out the stuffing.
  • After stuffing, make sure you place the thick side ( dense dough) on the bottom. It prevents from sticking at the bottom.
  • Don’t skip oil while making parathas. Use little oil as needed.
  • Green chilli and garlic are optional.
