Gobi Paratha | Cauliflower Stuffed Chapati | Step by step procedure with pictures
Cauliflower(Gobi) paratha is a popular paratha recipe in Punjab, India. It is commonly served for Breakfast and some may have it during lunch. a simple raita or pickle goes well with this paratha.

This is a stuffed paratha. You can add more stuffing and make a thick paratha or use less stuffing and make a thinner one. Both tastes good. Choose your preference.

INGREDIENTS :
For dough :
- Wheat flour / Atta – 1.5 cups
- Salt – as needed
- Water – as needed
- Oil – 1 Tbsp + for making parathas
For Stuffing :
- Cauliflower – 2 cups grated. (You can use store bought cauliflower rice also)
- Ginger – 1 Tbsp (grated)
- Garlic (opt) – 1 Tbsp (grated)
- Green chilli(opt) – 1
- Oil – 1 Tbsp
- Red chilli powder – 1 Tsp
- Coriander powder – 2 Tsp
- Cumin powder – 2 Tsp
- Garam Masala – 1 Tsp
- Dry mango powder/Amchur – 1 Tsp
- Salt – as needed
- Turmeric – 1/4 Tsp
- Coriander leaves – few
PREPARATION :
- Cut the cauliflower into florets. Check for worms. Wash and drain it well. Grate it using a grate or food processor.
- Grate ginger and garlic. Finely chop green chilli and coriander leaves.
PROCEDURE :
For Dough :
- In a bowl add wheat flour and salt.
- Add required water and knead a soft dough.
- Spread some oil on the top and cover it.
- Let it rest for 30 min.
For Stuffing :
- Heat oil in a pan. Add grated ginger and garlic.
- Saute for a min. Add grated cauliflower and green chilli.
- Cook for 3-4 min. Add spice powders ( red chilli powder, coriander powder, cumin powder, amchur powder, turmeric, garam masala and salt)
- Combine everything together and saute for few minutes.
- Add chopped coriander leaves and turn off the heat. Let it cool down.
Making Paratha :
- Make medium sized balls out of the dough.
- Dust each ball with flour and roll it thick using a rolling pin.
- Place 2 Tbsp of stuffing in the middle.
- Carefully cover it. (See pic below)
- Roll it gently. Do not make it too thin. Then your stuffing will come out. Also use flour for dusting as needed.
- Repeat for all the parathas.
- Heat a tawa / griddle. When it is hot, place the paratha over it.
- Let it cook for a min and flip it carefully. Spread 1/2 Tsp oil on both the sides.
- Flip it until you get beautiful brown spots on the parathas.
- Repeat for all. Place it over a cooling rack to prevent it from sogging.
NOTES :
- You can adjust the spices according to your taste.
- Be careful while rolling the parathas. First roll it thick and place the stuffing. If you roll it thin, it will easily spill out the stuffing.
- After stuffing, make sure you place the thick side ( dense dough) on the bottom. It prevents from sticking at the bottom.
- Don’t skip oil while making parathas. Use little oil as needed.
- Green chilli and garlic are optional.
